Korean Food Quickie: Fried Kimchee Rice

When travelling I always try to get something out of it. I buy a cookbook, learn some basic phrases of the spoken language or I try to make local friends. During my first days in Seoul I stayed at the Bibim Guesthouse. It is a truly nice and fun hostel in Hongdae. One of the staff members, Panda, is a chef. So one night when I came home from work around 7 p.m. carving some decent food (no cup noodles!), he was kind enough to prepare fried kimchee rice for me. Kimchee rice is a very easy dish that does not need that many ingredients and is also very cheap. I don’t know how easy it is to get these ingredients in other parts of the world but I’ll try to take that into account and give some advice on how to get them. If you are eager to recook it, here’s the recipe!

Ingredients (2 Portions):
  • ·         400 gr Cooked rice (it should be sticky rice!)
  • ·         250gr Kimchee

alternatively: spicy Sauerkraut …well… you can also find the grandma of your best Korean friend and bribe her to make some for you or buy it in every well stocked Asian supermarket

  • 2-3 eggs (that’s easy)
  • Salt & pepper,
  • Chili oil, sesame oil
  • Soy sauce (depends on taste)
  •  Gim

Korean seaweed, every other type of seaweed is a god alternative

  • Korean red pepper paste (Asian supermarket)

So here is my one and only recipe on my own fried kimchee rice, which I varied a little bit from the version Panda taught me. It takes about 10 minutes to make if you have all the ingredients at hand.

Instructions:

1.  Prepare the omelet! Crack 3 eggs and mix them together with some salt, pepper and chilly oil. Put them in the preheated pan and let it stir for a bit (do not scramble them!)

2.  At this point, make sure all other ingredients are already ready prepared.

3.  When the omelet is a bit brown below, put the rice into the still uncooked egg mixture on top.

4.  Stir and mix it together.

5.  Add the Kimchee, a tablespoon of red pepper paste (less for less spicyness), some salt and pepper

6.  Stir and fry it for 5-10 minutes and add some sessame oil for the taste.

7.  Serve it in a bowl with some gim!

Enjoy your foodgasm!
